Easter Weekend

We had a wonderful Easter weekend filled with family, fun times and of course, good food.

On our way to my parents, we stopped by this coffee shop in the quaint little town of Black Mountain (where Randy and I were married 🙂 ). I ordered the nutella mocha and it has forever changed my view on coffee drinks! It was fantastic! The barista took a large spoonful of nutella and mixed it with expresso. As she was mixing she asked me how much I like nutella, I replied that I loved it. She then proceeded to give me the espresso drenched nutella spoon. Oh my goodness! It was heaven!

I picked these pretty flowers up for my mom. I believe I am going to plant some blue thistle in my backyard. I love that intense blue color!

The next day, all the ladies got a mani & pedi. I haven’t had one since before Italy. It definitely was a treat!

Later that day we had a family get together with all of my family at my grandparents. I just love how silly and funny my brother is.

Looking at all these photos, I am remind how blessed I am. I have a beautiful, talented, funny family without whom I would be lost. I have the greatest husband a girl could ask for and to top it all off, I have amazing shoes! 😉 “Give a girl the right shoes, and she can conquer the world.”

But seriously, I feel truly blessed and I know exactly where all these blessings come from. So all my thanks goes to you, Lord! 🙂

Love List for March and April

So I forgot to do a love list for March. I blame it on all the birthday parties! 😉 Well, this just means that this list can be bigger!

1. I am in love with these cupcake stands! I just ordered them through decorsteals.com (This website is amazing, by the way, go check it out!) I can not wait to get them! You will be seeing these in my posts in the very near future!

2. I am not much into makeup, but this veil is really good. It absorbs oil, minimizes lines and gives me a flawless finish. I put it on top of my foundation but have used it alone many times.

3. This mop is amazing! It is so nice and easy to use! I love that the head comes off to be easily cleaned in the washer. I also like how small it is. It can clean under furniture and corners so much easier than my old mop!

4. I got my nails done this past weekend I really like this nail polish. I believe it is Strawberry Margarita by OPI, but I like to call it Barbie’s Convertible. It is a fun, pretty color for spring!

5. This has been our favorite dinner as of late; caprese salad. Especially now that tomatoes are in season.

6. This book is awesome! We finished it a little while back and all I want to do is read it again and again; especially the end! I can’t wait till the third book comes out! Please hurry Mr. Sanderson!

7. I love this necklace from Benevolent Jewels. I get so many compliments when I wear it. And this company is really cool, they donate 20% of their profits every 3 months to a charity. So not only do you get a beautiful piece of jewelry, you also get to help others! Now how can a husband get mad at that? 😉

8. These gold polka dot shoes are adorable! Too bad they are limited edition! If anyone finds them in a 6-6.5; let me know asap!

Our Weekends

We have been loving this beautiful weather here lately. Everyday when we get home from work we open up all the windows. I love airing out the house. I hope this awesome weather is here to stay!

Last weekend Randy and I went camping with his dad and his girlfriend at Paris Mountain. We have been excited to go camping since Randy got his new truck. We needed to break it in properly! 😉 We have been planning to get a truck for years now and camping is one of the many reasons we wanted a truck.

Paris Mountain was a very nice campsite and it was packed full! I guess everyone had the same idea as we did. It is just something I am not use to seeing because we usually camp in fall and winter (no one is out camping in January!).

I love sitting around a camp fire. It is the best!

And to end our perfect weekend we spent the evening drinking wine from Verrazzano (you can now get Verrazzano wine from Whole Foods, we are pretty estactic!) and watching “The Princess Bride.”

This weekend was dedicated to us. We hadn’t had a date night since Valentine’s Day, so Friday night we went out on a date. We went to Brixx Pizza and got our favorites: zucchini toast, buffalo chicken pizza and Old Chub Nitro beer.  It was a nice relaxing date. Sitting outside soaking up the sun and enjoying each other’s company.

The rest of the weekend was spent doing yard work and cleaning the house. But Sunday we enjoyed the day and the sunshine.

I hope everyone got out and enjoyed the gorgeous weather. I am so thankful that we were able to for two weekends in a row!

I am looking forward to Easter this weekend and seeing my family! Anyone have big plans for Easter?

New Schedule and Life Lately

Randy and I have been so busy. With spring well on its way, we have been more motivated to do things around the house. We have been spring cleaning the house for weeks now – we have cleaned out the garage, our closets, cleaned all the rooms, finished projects, etc, etc. On top of all that we have started a new workout routine.

We have started the T25 workout. For those of you who do not know, it is a high intensity workout that only last 25 minutes (plus a 2-5 minute stretch session). You do one workout everyday, 6 days a week. We have been participating for a week and half now and I am liking it. I like that it is only 25 mintues. We get up every morning at 5 am to do this workout. Getting up at 5 am every morning has been difficult and has thrown off our schedule a bit. It is just something we are not use to yet. I hope to make it a habit, but it is going to take time.

The workout so far has been intense, but not so intense that I can’t keep up. I am tired after every workout, which is good. My muscles are sore for days! Especially my legs. But it is a good feeling, knowing that I am getting a decent workout. I will keep you updated as we continue.

To compliment our new workout, I have found some new healthy dishes that we are loving. One being this salmon dish that I found on pinterest. You can find the recipe here or see below. I like serving it with a side of roasted potatoes.

Garlic Parmesan Salmon & Asparagus Foil Pack

Garlic Parmesan Salmon & Asparagus Foil Pack

Ingredients

  • 6 oz portion of Salmon
  • 7 Asparagus spears
  • 1 Tbsp whipped light butter
  • 1 Tbsp grated parmesan cheese
  • 1 clove garlic pressed
  • 2 tsp of lemon juice
  • Ground black pepper to taste

Instructions

  1. Preheat oven to 375F
  2. Cut a sheet of aluminum foil large enough for the the asparagus and salmon
  3. Arrange asparagus spears on foil and top with the salmon
  4. Mixed the remaining ingredients in a bowl to make a paste
  5. Smear the mixture on top of the salmon
  6. Cut another piece of foil large enough to cover everything and fold up the sides
  7. Place on a cookie sheet and bake for 30 minutes

We also have been drinking protein shakes like crazy. My favorite being peanut butter banana. The shake is simple: banana, vanilla whey protein, peanut butter and ice cubes. Sometimes Randy will added calicum and fiber powder in our shakes.

On top of our new workout routine, we have been busy in our social life as well.

Some of my girlfriends just turned 30 and they had a joint birthday party this past weekend.

We have had family to visit, church activities, birthday parties and household chores. I am looking forward to just sitting down and relaxing… but I don’t think that is going to happen any time soon! Oh well! That is what spring/summer is all about, right?
